Intro
Not every good bake needs a hot oven and a free afternoon. Some of my favourites are the easy ones — a no-bake cheesecake that sets in the fridge, a cobbler you throw together from whatever fruit’s going soft, a one-tin cake that looks after itself. This guide gathers the low-effort bakes: forgiving, summery, and hard to get wrong. Perfect if you’re new to baking, or just want something lovely without the fuss.
The recipes
- No-bake mango cheesecake — creamy filling on a biscuit base, set in the fridge, topped with blended tinned mango. No gelatine, no oven.Start here.
- Peach & berry cobbler — jammy fruit under a craggy, scone-like topping. A template for any ripe fruit.
- Lemon & blueberry cake — a simple one-tin cake with a drizzle that keeps it moist for days.
- Toasted meringue tart — a press-in crust and torched meringue: more showstopper than effort.
The Craft — the few things that matter
Let it set properly. A no-bake cheesecake needs full-fat cream cheese, everything cold, and a proper overnight chill — that’s what firms it, not gelatine.(See:folding.)
Thicken your fruit. A spoon of cornflour turns watery fruit juices jammy, so a cobbler or pie holds together instead of flooding.(See:self-raising flour.)
Keep fruit suspended. Toss berries in a little flour before folding them into a cake batter and they stay put rather than sinking to the bottom.
Drizzle while warm. A sugar-and-citrus drizzle soaks straight into a warm sponge, keeping it moist far longer.(See:curd for the tart’s filling.)

FAQ
Each also lives on its own page (FAQPage schema):
- How do I stop cheesecake being runny without gelatine? — full-fat, cold, and a proper set.
- Why is my cobbler filling runny? — thicken the fruit and leave gaps in the topping.
- Why do my blueberries sink? — toss them in flour first.
- Why does my meringue weep? — sugar not fully dissolved, or humidity.
Free-from & dietary options
Several of these flex easily: the cheesecake has agluten-free base swap and adairy-free version, and the cobbler works dairy-free too. Each recipe carries its own swaps.(Dietary themes only — a bake is never tagged with a packaging theme.)
