Intro

Not every good bake needs a hot oven and a free afternoon. Some of my favourites are the easy ones — a no-bake cheesecake that sets in the fridge, a cobbler you throw together from whatever fruit’s going soft, a one-tin cake that looks after itself. This guide gathers the low-effort bakes: forgiving, summery, and hard to get wrong. Perfect if you’re new to baking, or just want something lovely without the fuss.

The recipes

The Craft — the few things that matter

Let it set properly. A no-bake cheesecake needs full-fat cream cheese, everything cold, and a proper overnight chill — that’s what firms it, not gelatine.(See:folding.)

Thicken your fruit. A spoon of cornflour turns watery fruit juices jammy, so a cobbler or pie holds together instead of flooding.(See:self-raising flour.)

Keep fruit suspended. Toss berries in a little flour before folding them into a cake batter and they stay put rather than sinking to the bottom.

Drizzle while warm. A sugar-and-citrus drizzle soaks straight into a warm sponge, keeping it moist far longer.(See:curd for the tart’s filling.)
