Dairy-free baking has come a long way — block-style plant butters and dairy-free chocolate behave beautifully now, and a few of my recipes take to them without missing a beat. The texture can shift slightly (a touch softer here and there), and I’ll say so where it matters. As ever, check your own labels, and I’ll only tag a recipe dairy-free once I’ve tested the swap.
